Don't Throw Away the Carved-out Turkey Bones !

The day after Thanksgiving is a day for either rest to recuperate or join the shopping mall craze for bargains. After the party is over, what to do with the left-overs ?  Besides having lots of turkeys and hams for sandwiches, and desert that may last for many days, we usually dress them up and change them into different kinds of dishes. From making ordinary turkey meat into "Turkey a la King" by adding a can of cream of mushroom soup to chopped up turkey meat, to chopping them up combining them with vegetables as a new dish.  As for the huge bone carcass of the carved out turkey, we add water and rice to cook them into a delicious "Turkey Rice Soup". Cooking time about two hours until the rice are soft and the soup looks thick.  It goes well with some freshly chopped green Romaine lettuce, sprinkled it with some chopped green onions, parsleys, gingers or some roasted peanuts. Lightly seasoned it with salt and peppers to taste. Voila! a very tasty and simple dish!
